This accessory is commonly known as a Pigtail. It allows us to sample carbonated beer. 

Friction in the length of the coil reduces pressure to the outlet, 

which keeps the dissolved CO2 from breaking/exploding out. 

Without it, our sample would be a glassful (or facefull) of foam.
